Chocolate Layer Ingredients:

  • 2 tbsp Healthy Heights Kidz Protein Chocolate flavor (or you could use Grow Daily 3+ Chocolate or Grow Daily 10+ Chocolate)
  • 1/4 cup cocoa powder
  • 2 tbsp sweetener of choice
  • A pinch of salt
  • 1/4 cup milk (almond or skim)
  • 1/4 cup low-fat Greek yogurt

Peanut Butter Layer Ingredients:

  • 1/4 cup PB2 (powdered peanut butter)
  • 1/4 cup water
  • 1 tbsp sweetener of choice
  • A pinch of salt

Instructions:

  1. Prepare the Peanut Butter Layer: In a small bowl, combine the PB2, water, sweetener, and a pinch of salt. Mix until smooth and set aside.
  2. Prepare the Chocolate Layer: In a separate bowl, mix together the Healthy Heights Chocolate Protein Powder, cocoa powder, sweetener, salt, milk, and Greek yogurt until well combined and smooth.
  3. Assemble the Cups: Line a mini muffin tin with paper liners or use a non-stick spray. Pour about a teaspoon of the chocolate mixture into each muffin section. Top with a layer of the peanut butter mixture, then finish each cup with another layer of the chocolate mixture.
  4. Freeze: Place the muffin tin in the freezer and freeze until the peanut butter cups are firm enough to remove from the tin, about 1-2 hours.
  5. Enjoy: Once firm, remove the peanut butter cups from the tin and enjoy your healthy, protein-packed treat!
